Our Chef/owner, Bruce Lyon, graduated from The Culinary Institute of America in Hyde Park, NY in 1984 following several years working in commercial kitchens.  He worked as a chef around the U.S. including the Summit Room at Harrah’s Tahoe, The Christiania Restaurant in Sun Valley, ID, and teaching Hollywood’s elite to prepare healthful cuisine as head chef at The Cal-A-Vie Spa in Vista, CA.  Bruce perfected much of his production baking chops as head chef and baker with Steve Grover, original owner of Steve’s Bagels in Ridgefield, CT.

Bruce’s backgrounds in facility design, and building were employed to create his mobile pizzerias and bring his hand crafted cuisine to any outdoor location.

His style of cuisine focuses on growing and sourcing the freshest organic seasonal produce possible and integrating the finest imported ingredients to achieve a unique synergy of healthful nutrition and vibrant flavors.  His ice sculptures, fountains, liquor luges,
